Maillard Tavern is Chicago's newest burger bar, featuring local beef burgers cooked on a griddle to create a Maillard reaction to achieve a full flavor. The restaurant opened December 21, 2017 in River West. Maillard Tavern features various types of burgers, wild boar sloppy giuseppe (a tribute to the sloppy joe sandwich), soft serve ice cream, shakes (spiked and not spiked), donut sticks and a full bar featuring various whiskeys and bourbons as well as craft cocktails. The 1,600-sq.-ft. space has dine-in seating as well as bar seating.
